Beans'n'plantain
Ingredients:
- 40g red onion
- 30g tomato paste
- 20g garlic
- 0.5 teaspoon Chipotle chilli powder (or any spicy and/or smmoky chilli powder)
- 200g tomatoes
- coconut oil
- 2 plantains
- 400g any pre-cooked beans
- 1 lime
- 0.25 teaspoons cinnamon
Methods:
- Very roughly chop the red onion. Handblender it together with tomato paste, garlic and chilli powder into a paste.
- Finely chop the tomatoes.
- In a heavy bottom pot, heat a bit of coconut oil. Add the curry paste and fry for a couple of minutes, until it smells really good. Once it starts sticking to the bottom of the pot, add the tomato. Let it simmer on low heat.
- Heat some coconut oil in a large pan. Cut plantain into coins and fry them on both sides until golden.
- Prepare the beans (defrost or drain from the cans) and add them to the curry pot.
- In a large bowl mix the juice of a lime with cinnamon. Once the plantains are ready, add them in and mix until they absorb all the juice.
- Serve the beans with plantain.
