Black beans with plantain
Ingredients for 2 portions:
- olive oil
- 1 red onion
- 30g garlic (about 6 cloves)
- 30g tomato paste
- 3 teaspoons Berbere spice mix
- 0.5 teaspoon salt
- 400g of tomatoes (or a tomato can)
- 400g pre-cooked black beans
- 2 plantains
- 1 lime
Methods:
- Finely dice the onion. Separately, finely dice your tomatoes.
- Pre-heat a Dutch oven with a splash of oil. Fry the onion until it is just starting to brown.
- Add the garlic through the garlic press. Add tomato paste, Berbere spice mix and salt. Stir until the tomato paste develops a rust colour, then add tomatoes.
- Add (defrosted) black beans and simmer gently.
- Preheat a frying pan with a splash of olive oil.
- Cut the plantains in half, then half them lengthwise. Fry flat side down until the flat sides become nicely browned, then cover with a lid and reduce heat to allow them to cook through and develop sweetness.
- Once the plantains are ready, de-oil them with a paper towel. Sprinkle them with lime juice. Serve with the beans.
