Black beans with plantain

Ingredients for 2 portions:

  • olive oil
  • 1 red onion
  • 30g garlic (about 6 cloves)
  • 30g tomato paste
  • 3 teaspoons Berbere spice mix
  • 0.5 teaspoon salt
  • 400g of tomatoes (or a tomato can)
  • 400g pre-cooked black beans
  • 2 plantains
  • 1 lime

Methods:

  • Finely dice the onion. Separately, finely dice your tomatoes.
  • Pre-heat a Dutch oven with a splash of oil. Fry the onion until it is just starting to brown.
  • Add the garlic through the garlic press. Add tomato paste, Berbere spice mix and salt. Stir until the tomato paste develops a rust colour, then add tomatoes.
  • Add (defrosted) black beans and simmer gently.
  • Preheat a frying pan with a splash of olive oil.
  • Cut the plantains in half, then half them lengthwise. Fry flat side down until the flat sides become nicely browned, then cover with a lid and reduce heat to allow them to cook through and develop sweetness.
  • Once the plantains are ready, de-oil them with a paper towel. Sprinkle them with lime juice. Serve with the beans.
