Broccolini with bean mash

Ingredients:

  • 30g olive oil
  • 1 teaspoon chilli flakes
  • 2 cloves of garlic
  • 300g broccolini
  • 500g pre-cooked white beans (white kidney beans, butter beans, etc.)
  • 1 lemon
  • 0.25 teaspoon salt

Methods:

  • In a small pan heat the olive oil until hot but not yet smoking.
  • Meanwhile, place the chilli flakes into a small glass jar. Pour the hot oil into the jar, the chilli flakes will sizzle.
  • Use a garlic press to add garlic cloves into the jar of still hot oil.
  • Steam the broccolini.
  • Meanwhile, warm up the beans in the microwave. Add salt and juice of half a lemon. Handblender into a mash. Taste and adjust salt and acidity.
  • Serve bean mash topped with steamed broccolini and drizzled with chilli oil from the jar.
