Buttermilk pancakes
Ingredients:
- 150g flour
- 15g sugar
- 1.25 teaspoon baking powder
- 0.25 teaspoon baking soda
- 0.25 teaspoon salt
- 35g butter
- 1 egg
- 225g buttermilk (kefir)
Methods:
- Melt the butter and let it cool down a bit.
- In a large bowl, whisk together all the dry ingredients (flour, sugar, baking powder, baking soda and salt).
- In a different bowl, whisk together buttermilk and egg.
- Pre-heat a non-stick pan.
- Pour the buttermilk blend into the dry ingredients and give it 10 stirs to combine. Slowly stream in the melted butter, mixing it in with another 10 stirs. Be careful not to overmix the batter; it should remain lumpy!
- Spoon small dollops of batter on a hot non-stick pan. They will expand, so do keep them small and spaced out. Flip as soon as the bottom sides are golden brown, while the tops are still liquid.
