Carby stuff: pasta, sandwiches
Pasta al pesto:
- Sundried tomato and almond pesto pasta
- Parsley and walnut pesto pasta
- Roasted pepper and black olive pesto pasta
- Wild garlic pesto pasta
For a good pesto, you’ll have to fill in 7 roles:
- The body (juicy) - usually a herb (basil, parsley, mint), but could be anything (spinach, carrots, peas, sundried tomatoes, fried mushrooms, etc.)
- The body (dry) - walnuts, almonds, pine nuts, etc.
- Aromatics - garlic, onion, citrus zest, etc.
- Acidity - citrus juice, vinegar, etc.
- Umami - capers, yeast flakes, cheese, sundried tomatoes, fried mushrooms, etc.
- Saltiness - salt, salty cheese, soy sauce, miso, etc.
- Fat - usually olive oil.
You can have more than one ingredient per role, and ingredients that fill more than one role (for example, wild garlic leaves are both the body and the aromatic, while sundried tomatoes are both the body and the umami).
Sandwiches:
