Chard with bean mash
Ingredients:
- 40g olive oil
- 1 teaspoon of chilli (chipotle chilli powder, chilli flakes, etc.)
- 20g garlic
- 300g chard (rainbow or any other kind)
- 400g pre-cooked white beans (white kidney beans, butter beans, etc.)
- 0.25 teaspoon salt
- 40g lemon juice
Methods:
- Place chilli flakes and chilli powder into a small glass jar. In a small pan heat the olive oil until hot but not yet smoking. Pour the hot oil into the jar, the chilli flakes will sizzle.
- In a frying pan, heat a bit of olive oil. Slice the garlic cloves and add them in.
- Chop the chard and add it to the garlic. Mix them and let them cook on medium heat.
- Meanwhile, warm up the beans in the microwave. Add salt and lemon juice. Handblender into a mash. Taste and adjust salt and acidity (lemon juice).
- Serve bean mash topped with chard and drizzled with chilli oil from the jar.
