Chia seed pudding

Ingredients for 1 portion:

  • 20g chia seeds
  • 130g of liquid (e.g. plant-based milk; I use 100g of water and 30g of coconut milk from a can that is 50% coconut)
  • almond flakes
  • half a mango
  • fresh blueberries

Methods:

  • Into a glass jar add chia seeds, coconut milk and water. Close the lid and shake well.
  • After 10 minutes, shake well again. Put the jar in the fridge overnight.
  • When ready to serve, toast the almond flakes in a clean pan.
  • Handblender half a mango into a sauce.
  • Into a small bowl add all of the mango sauce, then empty the chia jar into the sauce. Top with blueberries and toasted almond flakes.
