Cucumber and tahini salad

Ingredients:

  • 60g tahini
  • 30g soy sauce
  • 20g mirin
  • 20g rice vinegar
  • 20g lime juice
  • 10g garlic (about 2 cloves)
  • 0.5 teaspoon Kashmiri chilli powder
  • small flavourful cucumbers
  • Nigella seed

Methods:

  • In a bowl, mix tahini, soy sauce, mirin, rice vinegar and chilli powder. Squeeze in lime juice. Add garlic through the garlic press. Mix everything into a smooth sauce (it will look wrong at first, but just keep mixing).
  • Cut cucumbers into cubes.
  • Spread the sauce into individual small serving plates. Top each plate with cucumber and Nigella seeds.
