Halloumi in pita

Ingredients for 1 portion:

  • olive oil
  • cherry or other tomatoes
  • 1 halloumi
  • 1 Romano pepper
  • 1 pita bread
  • hummus
  • zaatar

Methods:

  • Pre-heat some olive oil in a frying pan.
  • Cut tomatoes into chunks if they are not already cherry. Add them to the frying pan.
  • Cut halloumi into thick slices and arrange them on the frying pan in a single layer. Fry until golden on both sides.
  • While halloumi is frying, finely slice the pepper. Toast the pita cut in half.
  • Once the halloumi is ready, spread some hummus on the inside of the pita halves and sprinkle it generously with zaatar. Stuff pitta halves with halloumi, charred tomatoes and pepper slices.
