Lazy halloumi wrap
Ingredients for 1 portion:
- 1 halloumi
- 1 Romano pepper
- 100g Cavolo nero (or any Lacinato kale)
- a pinch of salt
- olive oil
- 1 pita bread
- hummus
- zaatar
Methods:
- Pre-heat the oven to 190C.
- Cut halloumi into thick slices and cut the Romano pepper in half (and discard the seeds). Arrange them on a baking sheet lined with baking paper. Bake for 15 minutes.
- Meanwhile, de-stem the kale. Wash, dry and chop it finely. Place the kale into a bowl, add a pinch of salt and a tiny bit of olive oil. Give it a massage with your hands until it wilts a bit and reduces in volume.
- Toast the pita.
- Once the halloumi is ready, serve it with kale, hummus and pita. Handblender oven roasted pepper into a sauce and drizzle it on top. Sprinkle zaatar on top.
