Lazy halloumi wrap

Ingredients for 1 portion:

  • 1 halloumi
  • 1 Romano pepper
  • 100g Cavolo nero (or any Lacinato kale)
  • a pinch of salt
  • olive oil
  • 1 pita bread
  • hummus
  • zaatar

Methods:

  • Pre-heat the oven to 190C.
  • Cut halloumi into thick slices and cut the Romano pepper in half (and discard the seeds). Arrange them on a baking sheet lined with baking paper. Bake for 15 minutes.
  • Meanwhile, de-stem the kale. Wash, dry and chop it finely. Place the kale into a bowl, add a pinch of salt and a tiny bit of olive oil. Give it a massage with your hands until it wilts a bit and reduces in volume.
  • Toast the pita.
  • Once the halloumi is ready, serve it with kale, hummus and pita. Handblender oven roasted pepper into a sauce and drizzle it on top. Sprinkle zaatar on top.
