5min lasagna substitute
Ingredients:
- pre-cooked beans
- Some sort of flavourful spicy paste (Mexican mole paste is ideal)
- Cheddar cheese
- Red onion
- 1 avocado
- 1 lime
- Pitas
Methods:
- Pre-heat the top grill of the oven to 220 C.
- Meanwhile, prepare the beans (defrost or drain from the cans). Mix them with some sort of spicy paste. Grate the cheese. Place the beans in an oven-ready dish and top with cheese. Bake in the oven directly under the grill.
- Meanwhile, finely slice a bit of red onion. Mix mashed avocado with lime juice. Toast the pitas.
- Once the top of the cheese is starting to turn golden (or when you can’t wait any longer), take the beans out of the oven, top with zingy avocado and red onions, and serve with pitas.
Notes: This doesn’t have much in common with a traditional lasagna lovingly prepared over many hours. But this is so much better than a barely-edible defrosted lasagne from a supermarket! For me the essential components of lasagna are thin carby layers of pasta (pitas in this case), rich and satisfying filling (the beans) and lightly oven-burnt cheese. This recipe ticks all the boxes in 5min.
