Mushroom sandwich
Ingredients:
- 1 red onion
- red wine vinegar
- olive oil
- various mushrooms
- 20g garlic (about 4 cloves)
- 20 twists of black pepper
- sourdough bread
- hummus
- sundried tomatoes (jarred in oil)
Methods:
- Finely chop the red onion, place into a glass jar and submerge in vinegar.
- Chop the mushrooms. Preheat the pan, add a generous splash of olive oil, fry the mushrooms.
- When the mushrooms are golden on most side, use a garlic press to add garlic cloves directly into the pan. Add black pepper.
- Take 2 slices of sourdough bread, spread hummus on both slices. Top one slice with mushrooms. Add chopped sundried tomatoes. Add pickled onions dried with a paper towel. Top with the second slice of bread.
