Mushroom sandwich

Ingredients:

  • 1 red onion
  • red wine vinegar
  • olive oil
  • various mushrooms
  • 20g garlic (about 4 cloves)
  • 20 twists of black pepper
  • sourdough bread
  • hummus
  • sundried tomatoes (jarred in oil)

Methods:

  • Finely chop the red onion, place into a glass jar and submerge in vinegar.
  • Chop the mushrooms. Preheat the pan, add a generous splash of olive oil, fry the mushrooms.
  • When the mushrooms are golden on most side, use a garlic press to add garlic cloves directly into the pan. Add black pepper.
  • Take 2 slices of sourdough bread, spread hummus on both slices. Top one slice with mushrooms. Add chopped sundried tomatoes. Add pickled onions dried with a paper towel. Top with the second slice of bread.
