Okra with bean mash

Ingredients:

  • 1 lemon
  • 6 cloves of garlic (about 30g)
  • 30g tomato paste
  • 30g olive oil
  • 2 teaspoons cumin powder
  • 0.5 teaspoon Kashmiri chilli powder
  • 0.25 teaspoon salt
  • 350g okra
  • 1 red onion
  • 2 tomatoes
  • 700g pre-cooked white beans (white kidney beans, butter beans, etc.)
  • 0.25 teaspoon salt
  • 40g lemon juice

Methods:

  • Peel the lemon and finely chop the zest strips, you should have about 10g. Place it in a bowl together with roughly chopped garlic cloves, tomato paste, olive oil, cumin powder, chilli powder and salt. Handblender everything into a paste.
  • Steam the okra until almost ready.
  • Pre-heat a frying pan with a bit of olive oil. Cut the onion into 8 wedges, and start frying it. Add the okra to finish cooking it in the pan.
  • Meanwhile, warm up the beans in the microwave.
  • Cut the tomatoes into 8 wedges. Add them into the pan. Add the lemon zest paste to the pan and mix everything together.
  • Add salt and lemon juice to the beans. Handblender into a mash. Taste and adjust salt and acidity (lemon juice).
  • Serve bean mash topped with veggies.
