Okra with bean mash
Ingredients:
- 1 lemon (zest and juice)
- 6 cloves of garlic (about 30g)
- 30g tomato paste
- 30g olive oil
- 2 teaspoons cumin powder
- 0.5 teaspoon Kashmiri chilli powder
- 0.25 teaspoon salt
- 350g okra
- 2 red onions
- 2 tomatoes
- 700g pre-cooked white beans (cannellini, white kidney beans, butter beans, etc.)
- 0.25 teaspoon salt
Methods:
- Peel the lemon and finely chop the zest strips, you should have about 10g. Place it in a bowl together with roughly chopped garlic cloves, tomato paste, olive oil, cumin powder, chilli powder and salt. Handblender everything into a paste.
- Boil the kettle.
- Cut each onion into 6-8 wedges. Same for tomatoes.
- Pre-heat a frying pan with a bit of olive oil. Start frying the onion.
- Steam the okra until almost ready.
- Once you start smelling the okra, add it into the frying pan. Add the tomatoes too.
- Meanwhile, warm up the beans in the microwave.
- Add the lemon zest paste to the pan and mix everything together.
- Add salt and 40g of lemon juice to the beans. Handblender into a mash. Taste and adjust salt and acidity (lemon juice).
- Serve bean mash topped with veggies.
