Squash and pomegranate salad

Ingredients:

  • Butternut squash
  • Pomegranate
  • Feta
  • Mint
  • Zaatar spice mix
  • Olive oil

Methods:

  • Preheat the oven to 200C.
  • Peel the butternut squash, chop it into cubes, coat them in olive oil. Bake until tender and starting to char on the corners, about 40min.
  • Slice the pomegranate in half and extract the seeds by making strategic shallow incisions with a sharp knife.
  • Chop feta and mint.
  • Mix everything and dress with olive oil and Zaatar spice mix.
