Squash and pomegranate salad
Ingredients:
- Butternut squash
- Pomegranate
- Feta
- Mint
- Zaatar spice mix
- Olive oil
Methods:
- Preheat the oven to 200C.
- Peel the butternut squash, chop it into cubes, coat them in olive oil. Bake until tender and starting to char on the corners, about 40min.
- Slice the pomegranate in half and extract the seeds by making strategic shallow incisions with a sharp knife.
- Chop feta and mint.
- Mix everything and dress with olive oil and Zaatar spice mix.
