Veggie burger

Ingredients for 2 burgers for 1 very hungry human:

  • 280g red kidney beans
  • 30g tomato paste
  • 10g paprika powder (sweet or smoked, or a mix of both)
  • 0.25 teaspoon salt
  • olive oil
  • rye bread
  • mustard
  • 1 red onion
  • 1 tomato
  • mild cheddar cheese

Methods:

  • Prepare the beans (defrost or drain from the cans). Into a bowl add the beans, tomato paste, paprika powder and salt. Mix forcefully with hands, squashing most of the beans. Once you have a homogeneous ball of bean mass, split it into two equally sized balls.
  • Pre-heat some olive oil in a frying pan. Place the bean balls onto the hot pan and press them into flat burgers. Brown them on both sides.
  • Meanwhile, toast two slices of rye bread.
  • Slice the onion, tomato and some cheese.
  • Spread mustard on both slices of bread. Place onion slices on top. Top with burgers.
  • Use the still hot pan to melt the cheese. Top the burgers with melted cheese and tomato slices.
